My science discovery this week is on cauliflower. Why I am choosing this is because I had some this weekend and it is very tasty. Cauliflower is from the Brassica Oleracea species and is a part of the Brassicaceae family. That species also has other members such as broccoli, brussels sprouts, cabbage, collard greens, and kale. Cauliflower also comes in different colors such as white, orange, green, and purple. Cauliflower is low in fat but is high in dietary fiber. Some other things it contains are folate, water, and vitamin C. The oldest record of cauliflower was back in 6th century B.C.
